You're working off 3,840W continuous and about 2,350Wh usable after inverter losses. A 2,200W kettle runs on its own with plenty in reserve. So does a 1,200W microwave. Running both at once sits too close to the ceiling, so treat it as one or the other. Your 60L camp fridge draws around 45W averaged over a day, which is two days and change per charge. A camper air conditioner is roughly three hours, which is what owners report. Heating gear is the exception: Lifting Power stretches to 7,680W for a simple element, because there's no motor to start.

Do you need the Hub D1 with the Apex 300?
If you want USB or 12V outputs, yes. The Apex 300's AC sockets are on the unit, but the USB-C, USB-A, cigarette lighter, DC5521 and Anderson outputs all come from the Hub D1, which is rated at 700W. If you're only running mains appliances through the AC sockets, you can skip it. If you want to run a 12V fridge lead or charge phones directly, order the hub with the unit.
Charging the Apex 300 from solar
Solar comes in on two strings at up to 1,200W each, so 2,400W total, taking panels from 12 to 60 volts at 20 amps per string. Pass-through charging means your fridge keeps running while the panels top it up.
